Solanine, also known as solanine, solanine, potato toxin, etc., is a glycoside alkaloid, widely present in potatoes, tomatoes, eggplant and other solanaceae plants. α-solanine, α-solanine, α-tomatine, α-solanine and α-marginalis solanine are the main five kinds of solanine contained in solanaceae crops, and the solanine in potatoes are mainly α-solanine and α-solanine, accounting for 95% of the total solanine content in potatoes.
The most common cause of solanine poisoning is the consumption of potatoes or potato products containing large amounts of solanine. At present, Health Canada has in the "Food Contaminants and Other Adulterants List" potato tuber "α-solanine and α-carsolanine" content of the maximum set at 200 mg/kg, eating food containing excess solanine will lead to human poisoning potential.
